Xarel·lo, Macabeu, Parellada, Chardonnay; alcohol: 11.5%; estate vineyards in D.O. Cava at 720 feet; chalky limestone soils; harvested at night to preserve acidity; each variety vinified separately in stainless steel tanks; first press lots blended; slow second fermentation in bottle at cool temperatures; aged minimum 18 months on lees; certified Organic and vegan friendly.
Tasting Notes
This cava is a perfect integration of fine bubbles with a soft and delicate texture. It has toasted aromas of coffee, with touches of honeysuckle and vanilla, that lead to a fruity richness of peach and grapefruit, complemented by jasmine and elderflower. The palate is fresh, fruity, and creamy, but at the same time light, with body from the lees. Notes of nuts and almonds on the fine grained finish.
