Azimut is produced by Cellers de Can Suriol del Castell in the Alt Penedes, using certified-organic Macabeo, Xarel-lo and Parellada purchased from neighboring organic growers. Named after the Catalan line between sun and sea, the cava ferments with indigenous yeasts and ages a minimum of ten months on lees before a very low dosage (under 2 g/L) natural finish.
