Vaimaki Family is the project of oenologist Vasilis Vaimakis, who revived his family's winemaking roots after years leading the Zitsa and Amyndeo cooperatives. Apeiros Gaea ("infinite earth") is a pet-nat made from Debina, the high-acid white grape native to Zitsa in Epirus, fermented without additives in closed stainless steel to trap natural CO2.
