Profile & Story
Champagne Chavost sits in the village of Chavot-Courcourt, in the Coteaux Sud d'Epernay, and was founded in 1946 by some twenty growers of the village. Since 2019 the trained oenologist Fabian Daviaux has been remaking the old cooperative as a grower house working five hectares, with the member growers farming biodynamically; the estate was certified organic in 2023 and most of its wines are never sulfured at all. The Ratafia Champenois is the classic dessert wine of the Champenois, with a history of several hundred years: unfermented must, half Chardonnay and half Meunier, fortified with grape spirit and matured in very old oak casks by the solera method, begun in 2018. Nothing is added at mutage, during maturation or at bottling - no sulfites, no fining, no filtration.
Tasting Notes
The house publishes no formal tasting note; importer and retailer notes describe a nose of dried fruit, honey and vanilla on a rich, fortified frame.
Pairing Recommendation
Suggested with aged cheeses, dried fruit, creme brulee, or salted-caramel and vanilla ice cream.
