Profile & Story

The Binner family has farmed at Ammerschwihr in Alsace since 1770. Christian Binner took over in 1999, certified the estate organic in 2004 and Demeter biodynamic in 2020, works the vines by hand and with horses to avoid compacting the soil, and has added no sulfur since 2013; his cellar is a bioclimatic underground room built of Vosges pink sandstone, oak and fir, with curved forms and no right angles so that it holds temperature naturally. Bombisch is Alsatian for a grape that is plump and full of juice, and gives its name to the estate's SOIF range of easy, fresh, shareable wines. The macerated Bombisch is a co-fermentation of Pinot Gris and Pinot Noir given roughly two weeks of whole-bunch maceration together - what Christian calls a vin blouge, both blanc and rouge - with indigenous yeasts, no added sulfur, and bottling unfined and unfiltered. 12% ABV.

Tasting Notes

Light ruby-salmon and translucent, with red cherry, strawberry, citrus peel and a floral lift. Light-bodied and juicy on the palate, with gentle tannin, bright acidity, red-berry fruit and a saline, mineral finish.

Pairing Recommendation

Suggested with tarte flambee, grilled salmon, charcuterie, mushroom risotto and aged Munster.
