Domaine de la Patience lies near the Pont du Gard, between Nimes and Avignon, and takes its name from a herbaceous plant that grows on its land. Christophe Aguilar farms organically across two communes - Bezouce, on the rolled pebbles of the Costieres de Nimes, and Ledenon, on loess - and works to what he calls total respect for the fruit: native yeasts, controlled fermentation temperatures and limited sulfiting, in a stone cellar built in 1930. The IGP Coteaux du Pont du Gard rosé is destemmed and direct-pressed, fermented under temperature control and raised in concrete vat before fining. Grenache and Cinsault are the estate's rosé varieties, alongside Syrah, Carignan and Merlot for the reds. 12% ABV.
