Profile & Story
El Maestro Sierra was founded in 1830 by Jose Antonio Sierra, one of the coopers who built barrels for Gonzalez Byass before starting his own bodega in Jerez de la Frontera; the house remains one of Jerez's smaller, family-run producers. The Fino is 100% Palomino, fortified to 15% ABV to encourage development of the velo de flor, then aged around four years in 500-liter American oak butts through the traditional criaderas y soleras system.
Tasting Notes
Dry, pungent and delicate, with the pale color and fresh, saline character typical of flor-aged Fino.

The bodega recommends it alongside a good Iberico ham.
