El Maestro Sierra's Pedro Ximenez is made from 100% Pedro Ximenez grapes, part of the same coupage program the bodega uses to blend Palomino and PX into its Cream and Amoroso styles. The grapes are sun-dried (asoleo) to concentrate sugars before a slow fermentation and extended solera ageing.
Tasting Notes
A natural sweet wine, dark and dense, with the deep raisin, fig and molasses character typical of sun-dried Pedro Ximenez -- unctuous and long on the palate.
