Profile & Story

Paolo Bea is a family estate in Montefalco, Umbria, farming according to natural and biodynamic-leaning principles. For their Sagrantino Passito, 100% Sagrantino grapes are hand-harvested from vines at Pagliaro, around 400 meters above sea level on clay soils, then dried for four to five months on straw mats sourced from around Lake Trasimeno — a method chosen because the straw allows proper ventilation during the long appassimento period and prevents mold. The wine then ages some 50 months in steel, decanted into fresh containers annually, followed by at least a year in bottle.

Tasting Notes

A sweet wine with fruity aromas reminiscent of persimmon, blackberries and dried figs; on the palate it opens sweet but finishes smoothly, with a light dryness reminiscent of a more traditional dry red.

Recommended with dry, aged cheeses and dried fruit.
