Profile & Story
Ànima Mundi is a biodynamic project in the Alt Penedès of Catalonia, farming chalky, high-elevation vineyards cooled by the Mediterranean to make low-intervention, terroir-driven wines. The Rosat is a pale-pink ancestral-method sparkling (pét-nat) built from native Penedès grapes — a blend of Garnatxa with Xarel·lo and Macabeu — bottle-fermented and left unfiltered with minimal sulphur.
Tasting Notes
Pale coral-pink with a gentle, frothy mousse; ancestral-method rosés like this show fresh red-berry fruit — strawberry and redcurrant — a light, slightly cloudy texture and a dry, zippy finish.
Pairing Recommendation
Serve well-chilled as an apéritif, or with charcuterie, fried snacks and lighter shared plates.
