'Vice Versa' is a natural co-ferment from certified-organic vines around Visan in the southern Rhone, declassified from Cotes du Rhone to Vin de France because of its unconventional technique: equal parts Cinsault and Viognier are hand-harvested and fermented together on native yeasts in stainless steel after a six-day maceration, then bottled unfined and unfiltered with minimal sulfur (30ppm total).
