Rico Nuevo Viticultores farms old Garnacha vineyards around Burgohondo, in the Sierra de Gredos, on granite soils between 900 and 1,050 meters. Vereda de las Tordigas is harvested from several parcels across the valley in early September, given a 72-hour cold soak, fermented with 30% whole clusters in stainless steel, and macerated a further 20 days before aging in 25-hectoliter foudre alongside concrete and clay vessels. The wine is unfiltered and unclarified.
