Unico Zelo is the Adelaide Hills project of Brendan and Laura Carter, who set out to make what they call Italian-inspired, textural and site-expressive wines. Esoterico has become one of the winery's most cult-followed bottlings. The fruit is sourced from the Riverland, where the soils are ancient sandy limestone, and the blend is Fiano, Zibibbo, Moscato Giallo, Gewurztraminer and Greco. It is fermented on skins for two weeks, then matured for a year in large 3000-litre casks, with no fining or filtration. It is vegan friendly. As the producer puts it, it is not exactly white wine, nor red -- many call it orange or amber, but they just call it Esoterico.
