Profile & Story
Il Casato is a Pinot Grigio from Cantine di Ora in the Valdadige DOC of Trentino-Alto Adige, northern Italy. The grapes are softly pressed and the must is fermented in stainless steel at a controlled 16 to 18°C, followed by ageing, stabilization and cold bottling. 13% ABV.
Tasting Notes
Straw yellow, with an intense, long-lasting fruity and floral nose showing hints of golden apple, litchi and hay. Dry in the mouth, with great character and elegance and a good balance between body and acidity.
Pairing Recommendation
Perfect as an aperitif, and with dishes that are not too savory but a little rich, such as cheese and cold-cut starters, risotto, well-seasoned seafood and white meat.
