Profile & Story
Dopff & Irion is an Alsace estate established in 1945 by two families with centuries-old winemaking roots in Riquewihr. This Crémant d'Alsace Brut Rosé is made from 100% Pinot Noir grown on limestone and chalky-clay soils, hand-harvested and produced by direct pneumatic pressing, controlled-temperature fermentation, racking, and maturing on fine lees for 4 months before ageing in vats for 5 months prior to bottling. ABV 12%.
Tasting Notes
Brilliant salmon-pink color with a persistent bead of refined, abundant bubbles; aromas of red and black berries, wild strawberries, red currant, fresh thyme, discreet roasted notes, brioche and tarragon; fresh and harmonious on the palate with the same fruit and herbal notes (tarragon and sage) carrying through.
Pairing Recommendation
A refined aperitif perfect for cocktails or receptions; its freshness also suits a full meal (rabbit terrine, Italian-style grilled vegetables, chicken with tarragon, country-style ham) and even dessert (pepper-and-mint soup).
