Profile & Story

Allegrini is one of Valpolicella's most respected producers, rooted in the Fumane area for generations. Palazzo della Torre, named for the vineyard surrounding the historic Villa della Torre, uses a partial appassimento technique in which a portion of the grapes is dried before a second fermentation on the fresh must, a method pioneered by Franco Allegrini. This gives the wine extra richness and complexity beyond a typical Veronese red blend.

Tasting Notes

Dried fig and cherry notes meet warm spice and cocoa, with the added richness of partial appassimento. Restaurant's Notes: Dried cherry, fig, black tea, cocoa, sweet spice; medium body with supple tannins and a touch of appassimento richness.

Pairing Recommendation

Pairs nicely with eggplant parmigiana or roasted poultry.
