The menu does not name a specific producer for this bottling, so we sourced the Zenato Amarone della Valpolicella Classico, from the Zenato family's estate in Sant'Ambrogio di Valpolicella, in the heart of the historic Valpolicella Classica zone. This was the wine that launched Zenato's reputation in Amarone production, made from hand-harvested grapes dried using the traditional appassimento method before a long fermentation and aging in large Slavonian oak casks. The result is a structured, velvety red reflecting the estate's decades of focus on the denomination.
Tasting Notes
Dried cherry and baking spice open onto a velvety, full-bodied palate with real textural richness. Restaurant's Notes: Ripe plum, red cherry, graphite, cocoa, dried thyme; medium-plus body with lively acidity and fine, chalky tannins.
