The menu does not name a specific producer for this bottling, so we sourced the Tommasi Amarone della Valpolicella Classico, the flagship wine of the Tommasi family, who have been producing wine in Valpolicella Classica since 1902. The grapes are drawn from the prized La Groletta and Conca d'Oro crus, dried for about three months before a slow fermentation and three years of aging in large Slavonian oak casks. Tommasi's style favors elegance and balance over sheer power, aiming for an Amarone that stays approachable at the table.
Tasting Notes
