Bodegas Yuste is a family winery in Sanlúcar de Barrameda, Cádiz, producing traditional Manzanilla under biological aging beneath a protective layer of flor yeast. The Aurora bottling ages roughly eight years in century-old American oak butts, which builds its saline, yeasty character; it has won gold at the International Wine Challenge and the Sommelier Wine Awards.

Tasting Notes

A bone-dry, briny Manzanilla with real age on it — yeasty and mineral, built to wake up the palate. Restaurant's Notes: Green apple skin, blanched almond, chamomile, sea spray, yeasty floral notes; bone-dry, feather-light with a saline, mouthwatering finish.
