Profile & Story

Domaine Collet (Jean Collet & Fils) is a family estate in Chablis holding parcels in the Valmur and Les Clos Grand Crus; the Valmur bottling comes from a northwest-facing parcel farmed organically (certified from the 2018 vintage). Fermentation is spontaneous, with 18 months of élevage in Burgundy oak pièces to build natural stability without masking the terroir.

Tasting Notes

A racy, mineral-driven Chablis Grand Cru with the flinty, oyster-shell character the appellation is famous for. Restaurant's Notes: Lemon zest, green apple, crushed oyster shell, flinty/mineral core; racy acidity with a saline finish.
