Profile & Story
Domaine Olivier Hillaire is a small family estate created in 2006 by Olivier Hillaire on parcels of the historic Domaine des Relagnes vineyard, formerly worked by his father-in-law Henri Boiron. Hillaire's sons Baptiste and Corentin have since joined him, and together they also took on the neighboring Clos Saint Pierre in 2020 to form the Vignoble Hillaire. The Châteauneuf-du-Pape vines are old plantings on sand and rolled pebbles, with the red typically built around roughly 90% Grenache and a small portion of Syrah.
Tasting Notes
Ripe and generous, with dark berry fruit and a warm, spiced core that carries through to a soft finish. Restaurant's Notes: Raspberry liqueur, black cherry, thyme, leather, smoked meat; plush mid-palate with fine, powdery tannins and a spicy lift.
Pairing Recommendation
Pair with grilled lamb skewers or a slow-cooked short rib.
