Profile & Story

Dominio de las Abejas is a certified-organic boutique winery in the Valle de Ojos Negros, Baja California, founded in 2015 by winemaker Mauricio Ruiz Cantu with viticulturist Ricardo Michel Mata. This 100% Nebbiolo (Picotener clone CVT 415) is hand-harvested and wild-fermented with native yeasts from the estate's organic, unirrigated vineyard, then aged nine months in concrete eggs on fine lees to soften the variety's structured tannins before bottling unfined and unfiltered.

Tasting Notes

A rustic, floral Mexican Nebbiolo with the variety's telltale tar and rose-petal lift over bright acidity and firm, fine-grained tannin. Restaurant's Notes: Sour cherry, rose, orange peel, tar, dried thyme; firm yet fine tannins and a long, dry finish.

Pairing Recommendation

Pairs well with grilled lamb or mushroom-forward Baja dishes that echo the wine's earthy, floral character.
