Profile & Story
Hourglass is a small, family-run Napa Valley estate founded by Jeff and Carolyn Smith on the Hourglass Estate vineyard in the valley floor's Calistoga end, with additional fruit from the mountainside Blueline Estate. HG III is winemaker Tony Biagi's proprietary blend built around Merlot, Petit Sirah and Cabernet Sauvignon, with a small amount of mixed old-vine field blend adding depth. Biagi, who has also made wine for Plumpjack, Paraduxx and Cade, designed HG III to combine Merlot's supple texture, Petit Sirah's dark structural backbone and Cabernet's framing tannin. The 2022 is aged roughly 18-20 months in French oak.
Tasting Notes
Layers of black cherry and cassis unfold into cocoa and pipe-tobacco spice, with a plush, polished texture that keeps the tannins in check through a long, chocolate-tinged finish. Restaurant's Notes: Black cherry, blueberry, cocoa, espresso, vanilla; rich and smooth with rounded tannins and a chocolaty finish.
Pairing Recommendation
Pairs beautifully with grilled short ribs or a mole-braised beef dish, where its dark fruit and cocoa notes echo the sauce's richness.
