Profile & Story

Hacienda La Lomita, founded in 2009 by Fernando Pérez Castro in Valle de Guadalupe, is one of the region's few certified-organic wineries, farming estate vines on a northwest-facing slope of clay and granite soils. Its Sauvignon Blanc (often blended with a touch of French Colombard) is fermented in stainless steel to highlight the bright citrus and herbal character typical of the cool site near San Antonio de las Minas. The estate is also known for old-vine Grenache bottlings like Pagano, from vines over 60 years old.

Tasting Notes

Zippy and green, with a jalapeño kick that nods to its Baja home — a Sauvignon Blanc built for the table it's served at. Restaurant's Notes: Lime zest, green apple, passionfruit, jalapeño, sea spray; crisp and zippy with a clean, saline snap.

Pairing Recommendation

A natural pairing for ceviche, fish tacos, or a fresh nopales salad.
