Paul Hobbs founded his eponymous winery in Sebastopol after a career that included stints at Robert Mondavi, Simi, and Opus One, and he has been called one of the most influential Pinot Noir and Chardonnay producers on the North Coast. His appellation-level Russian River Valley Pinot Noir is hand-sorted, fermented in small open-top stainless tanks with indigenous yeast, and undergoes a 5-day cold soak and 15-day maceration before spontaneous malolactic fermentation in barrel. It is aged in a selection of new and neutral French oak and bottled unfined and unfiltered.
