Profile & Story

Paxton is a family-owned, certified organic and biodynamic winery established in 1979 in McLaren Vale, South Australia, farming all its own estate vineyards. This Grenache comes from the Thomas Block on the Seaview sub-region, where old bush vines are hand-picked and undergo whole-bunch fermentation with wild yeast in open fermenters before aging eight months in used French oak. The approach favors slow, gentle extraction to keep the wine light-bodied and elegant rather than heavy, and the 2024 vintage was rated 93 points by Halliday Wine Companion.

Tasting Notes

Silky and perfumed, with ripe strawberry, raspberry and a lift of spice and dried flowers. Restaurant's Notes: Ripe strawberry, raspberry coulis, blood orange, white pepper, dried thyme; juicy and bright with soft, suede-like tannins.

Pairing Recommendation

Well suited to carnitas, mole poblano, or other dishes with moderate richness and spice.
