The Paring (styled 'The Paring' by its producer) is a value-tier label from the team behind JONATA and The Hilt Estate in Santa Barbara County, wineries under the same ownership as Napa's Screaming Eagle. Winemaker Matt Dees crafts The Paring from vineyard blocks that are either too young or don't fit the intended vintage style of JONATA and The Hilt, drawing fruit from acclaimed sites in Ballard Canyon, Sta. Rita Hills and Santa Maria Valley. The 2018 Paring Red is a Bordeaux-style blend of roughly 60% Cabernet Sauvignon, 20% Cabernet Franc, 18% Merlot and 2% Petit Verdot, aged about 22 months in French oak, over half of it new.
Tasting Notes
Blackcurrant and blueberry meet violet and graphite over a savory frame of cedar and tobacco, finishing long with a touch of mocha and firm, fine-grained tannin.
