Cedric Chene is the fifth generation to farm his family's estate in Berze-la-Ville in the Maconnais, taking over in 1973 and since focused on continuous plowing and reduced yields. He ferments with indigenous yeasts in stainless steel to preserve freshness, from vines averaging 35 years old.
