Maison Louis Latour, the historic Burgundy negociant-grower founded in 1797, sources this Pinot Noir from vines averaging 25 years old on clay-limestone soil in the Hautes-Cotes de Beaune (average yield about 50 hl/ha). The wine undergoes traditional fermentation in open vats, followed by 10-12 months of aging split between stainless steel and French oak barrels from the house's own cooperage, medium toast.
