Profile & Story
Bravium, Latin for "gift," is the project of winegrower Derek Rohlffs, who sources cool-climate Chardonnay and Pinot Noir from coveted sites in Sonoma's Russian River Valley and Mendocino's Anderson Valley. The Russian River Valley Chardonnay ferments and ages nine months in French and Hungarian oak (18% new) from five different cooperages.
Tasting Notes
Brilliant medium gold in the glass, with honey, pear, apple, pineapple, lemon oil and white-flower aromas framed by vanillin oak; the palate turns crisp pineapple and mango into apple pastry, full-bodied through the mid-palate with a lively, saline finish.
Pairing Recommendation
The winemaker suggests pairing with an oyster po'boy dressed with fennel, apple and celery-root slaw, or a corn, bacon and cauliflower chowder.
