Les Équilibristes is a collective of French winegrowers founded by François (a restaurateur and wine wholesaler) and Florent, working organically across Bergerac, the Loire, and the Languedoc with the shared aim of great terroir, indigenous grapes, native yeasts, and minimal cellar intervention.
Tasting Notes
A pétillant naturel made by the ancestral method from grolleau gris and pineau d'aunis grown on sand and gravel over black schist; direct-pressed, wild-fermented, and bottled with no dosage for a lively, unfiltered, pale pink sparkler.
Pairing Recommendation
Pairs well with charcuterie, soft-ripened cheeses, and light seafood appetizers.
