Ramon Saavedra spent fifteen years cooking in kitchens on the Costa Brava before returning to his native Cortes y Graena, in Granada, to expand his family's small vineyard to about four hectares. The vines sit on pebbly alluvial soils between roughly 1,080 and 1,200 metres on the northern side of the Sierra Nevada, planted since 1999 and worked entirely by hand with no chemical inputs; the altitude and cold nights hold on to acidity in a near-desert climate. Cauzon Blanco is a field blend, spontaneously co-fermented in stainless steel and aged six months in steel, bottled unfined and unfiltered with no additives of any kind, not even sulphur.
