Profile & Story

Jerome Galaup farms roughly seven hectares of biodynamically cultivated vines at La Ferme du Vert in Gaillac, in France's Sud-Ouest, where he has worked this way for some twenty years. L'Angelou is 100% Mauzac Vert made by the Gaillac methode ancestrale: spontaneously fermented and bottled before fermentation has finished, so the bubbles come from the primary fermentation rather than a second one. Certified organic and biodynamic, with zero added sulphur and no residual sugar.

Tasting Notes

Fresh pear on the palate with fuzzy peach and salted melon on the nose; super frothy and persistent bubbles, clear mineral character, perlant elegance and a dry finish with a touch of nuttiness.
