Profile & Story

Jeff Coutelou farms Mas Coutelou at Puimisson, a few kilometres from Beziers in the Languedoc; the estate has been certified organic since 1987 and today comprises about thirteen hectares of vines. '5SO' is a play on Cinsault, the single biodynamically cultivated grape behind the cuvee. The fruit is destemmed, given a short maceration and pressed, spontaneously fermented and aged nine months in concrete egg, then bottled unfined, unfiltered and with no added SO2. The wine is released as 5SO Simple in most years and as 5SO Formidable only in the best vintages; 2024 was the first appearance of the Formidable bottling in seven years.

Tasting Notes

Light bodied and dry with notes of candied strawberry, bruised cherry, white cranberry, wool, salt and fresh herbs, with earthy undertones, medium acidity, an elegant structure and firm dry tannins.
