Heinz Eifel crafts its Eiswein as a hand-harvested specialty: the grapes are picked in the early morning before sunrise, at temperatures as low as minus 8°C, so that when pressed while still frozen, the water separates from the concentrated sugars, acids, and flavors, yielding a small quantity of intensely concentrated must from a blend of 70% Silvaner and 30% Riesling. Built to age for many years, it is intended as an ideal dessert wine.
