Anapea practices regenerative, organic viticulture with elements of biodynamics, hand-harvesting indigenous Georgian grapes, and producing raw, vegan wines through wild yeast fermentation, six months’ skin-contact in qvevri, and ageing underground in a two-level marani; the estate also hosts a village complex with a museum, science lab, hotel, restaurant, and more, dedicated to preserving Georgia’s 8,000-year qvevri wine tradition.
