Profile & Story

Aleksandrouli 75 %, Mujuretuli 25 %. Harvest hand-picked in 20 kg boxes from plots of our Sadmeli vineyards, in Ambrolauri. Grape varieties were fermented separately with pre-ferment maceration at 8-10 °C with full skin contact, and then fermented at 23- 25 °C, all the desirable residual sugar level (40-50 g/l). Extracted from the grape solids and filtered with rough filtration to ensure separation from yeasts (fermentation agent). Stored at a negative temperature to prevent restarting fermentation.
