Dolin Vermouth de Chambéry Rouge NV
NV, Chambéry, Savoie, France
Profile & Story
Dolin has produced vermouth in Chambéry, in the French Alps, since 1821 and is the last independent producer of Vermouth de Chambéry. The recipe macerates more than 30 Alpine plants, flowers, and spices in local white wine, sweetened with grape must and sugar — the technique that earned Chambéry France's only vermouth AOC in 1932. 16% ABV.
Tasting Notes
Lovely spicy notes within a light, fresh, balanced profile; a clean finish with no excessive sweetness or lingering aftertaste — drier and more elegant than industrial sweet vermouths, with a distinctive Alpine aromatic bouquet.
Pairing Recommendation
Olives, nutty cheeses, cured meats; served on the rocks with a citrus twist; classic in Manhattan, Negroni, and Americano cocktails.
