Profile & Story
The Renardat-Fâche family has cultivated vines in the village of Mérignat for more than eight generations, in a region where vines have been grown since the Middle Ages. The 12.5-hectare estate has been certified organic since 2008 and Demeter biodynamic. The Cerdon is made by méthode ancestrale: a single natural fermentation begun in temperature-controlled tanks, then bottled while still fermenting so that carbonation continues in bottle from native yeasts and the grapes' own sugars — no added yeast, no added sugar. The wine is 70% Gamay and 30% Poulsard at a low 7.5% ABV.
Tasting Notes
A pretty, lively rose with a fine, regular bubble; nose of red fruit and white flowers; palate of red fruit with fine bubbles, a very fine balance of sugar and acidity (Poulsard's slight bitterness and the vineyard's natural acidity offset the residual sugar), and good length.
Pairing Recommendation
Serve well chilled as an aperitif, with dessert, or with spicy dishes. Best within two years.
