Psâgot is a boutique winery in the Jerusalem Mountains, founded in 2003 by Yaakov Berg; the estate sits above an ancient Second Temple-era winemaking cave, and each label reproduces a period coin found there. This rosé was sourced from the winery's premium vineyards in the northern Jerusalem Mountains and harvested at night to preserve freshness.
