Castello Banfi is based at the Castello di Poggio alle Mura in Montalcino, Tuscany; this grappa (labeled by the producer as Torre Grappa di Brunello) is distilled from the fragrant pomace left over from making Brunello di Montalcino, using the classic double-distillation, steam-current method to capture the aromatic character of the Sangiovese skins.
