About the Wine
The blend includes 52% Syrah, 42% Cabernet Sauvignon, and 6% Petite Verdot. Mac's Bordeaux-Rhône blend. Fait Accompli means "a thing that has already happened or been decided before those affected hear about it, leaving them with no option but to accept it". Paso Robles is known for being an amazing climate for growing Rhône varieties and Cabernet Sauvignon, and this is a blend from Peper Street and our Estate Vineyard. The Syrah component saw some whole cluster tank fermentation, while Bordeaux varietals were destemmed, both fermented in stainless steel tanks and small open-top bins, spending between 20-40 days on skins with a combination of pump-overs and punch-downs during cold soak and fermentation. Aged 20 months in French oak 265-liter and 225-liter barriques, 55% of which were new. 10% whole cluster across the blend.

Tasting Notes
Sugar dusted black currants, bing cherry, raspberry purée, roasted plums, lilac, birch beer, sweet olive, black pepper crusted beef carpaccio, eucalyptus pollen, toffee, Mexican hot chocolate, espresso beans. Palate approaches soft and supple, but firms with fine-grained tannins, and finishes juicy, with a taught mineral coil.
