Introducing Hippie Hill 2022, a wine that embodies the terroir of Thibido Vineyard’s organic soils and the true spirit of our hands-on winemaking process. Crafted from 67% Mourvèdre, 18% Syrah, 13% Grenache, 2% Carignan, this earthy, complex blend draws fruit from our CCOF Certified Organic estate vineyard in Paso Robles’ Willow Creek District. Each grape was carefully harvested over a four-week period, fermented in open-top vessels with native yeasts, and meticulously hand-punched down two times per day. The result is a wine that showcases the essence of the vineyard, from its unique soil profile to the thoughtful blending and traditional winemaking techniques that have shaped it.
