NEW! A bold, organic Syrah blend that mixes juicy berries with spicy pepper and a hint of smoke. This wine is your new favorite secret — smooth, complex, and full of surprises. The Bedfellow 2022 is a passionate wine born from from the unique terroir of the Thibido Vineyard in the Willow Creek District of Paso Robles AVA. Historically, The Bedfellow has been a Syrah but the 2022 vintage throws tradition aside and blends 60% Syrah, 30% Grenache, and 10% Mourvèdre, all sourced from our CCOF Certified Organic Vineyard. The west-facing, steep slopes of Thibido Vineyard feature Linne, Calodo, and Lockwood soils which impart a distinctive sense of place to the wine. Afternoon coastal breezes and cool nights help to balance intense berry flavor with elegant nuances of earth and flint. Every step of the winemaking process, from the hand harvesting of perfectly ripened clusters to the gentle press and precise aging, reflects our commitment to crafting wines that express the unique story of our land. Native fermentation unfolded at a cool and unhurried pace, embracing the skins to extract more color and flavor. Old fashioned foot treading was applied to further draw out the nuanced tannins. Following a gentle basket press, the juice was settled before being transferred to French oak barriques. The wine was aged in a 225 Liter barrique for nine months in new French oak and then nine months in neutral French Oak for a total of eighteen months in barrel. These three estate grapes showcase a harmonious wine of hearty Syrah enhanced by juicy, vibrant Grenache and a splash of rustic Mourvèdre. The result is a complex wine with a dynamic range of flavors and textures. These limited 50 cases reflect the best of our organic vineyard and Thibido’s style of winemaking. More subtle notes of black pepper, flint, and a playful hint of toasted s’more play in the wings. On the palate, it’s lush and elegant, with balanced oak that adds some structure to the wine.
