About the Wine
Vinification: 2.1 tons were hand-harvested from Siletto Vineyard on 9/20, at 22.1 brix. 80% of the grapes were kept intact to ferment whole-cluster, with the remainder being destemmed on top. The fermenters were sealed and left to cold soak for seven days until fermentation began, naturally and spontaneously. The fruit was basket-pressed after fermentation. Élevage: After pressing, the wine was settled overnight and raised in neutral, 500L where native bacteria carried out malolactic fermentation. After 18 months the wine was bottled. This wine was crafted without the use of added enzymes, acids, tannins or nutrients.
Tasting Notes
Bright and clean aromas of raspberry and red plum are nuanced by wet clay, light pepper and dried herb elements on the nose of this bottling. There's a clay-like grip to the palate, where a peppery spice decorates the red plum core.
