About the Wine
Vinification: 2.04 tons of Valdiguié were hand-harvested from Shell Creek Vineyard on 9/15, at 20.2 brix. The fruit was placed in a sealed tank, with 100% whole bunches. Carbonic fermentation was allowed to begin, naturally and spontaneously, and was basket pressed after 5 weeks on the skins and stems. Élevage: After pressing, the wine was settled overnight before being racked to neutral, 500L-puncheons, where native bacteria carried out malolactic fermentation. After 4 months the wine was bottled. The minimal amount of effective SO2 was used, and this wine was crafted without the use of added enzymes, acids, tannins or nutrients.
Tasting Notes
Aromas of blueberry sorbet and herby loam kick off the nose. The palate is zippy and fresh with dark fruit and light pepper flavors.
